Stoats are slender, agile hunters that remain active even through the UK’s winter months. Unlike many small mammals, they do not hibernate, relying on their speed to hunt rodents, birds, and eggs. In colder, more northern regions, stoats may turn entirely white in winter (ermine), though this is less common in milder Devon.
